The all-day Sauce in Detroit aims to capture customers at every daypart - restaurant-hospitality.com

Heirloom Hospitality — parent to the Townhouse, Prime + Proper and Cash Only concepts in Detroit — is planning to launch a new multi-daypart and multi-concept venue this spring called Sauce. The 11,000-square-foot project will house a multi-concept Italian restaurant, wine bar, bottle shop and all-day coffee bar.

Located in Midtown Detroit’s burgeoning arts district, Sauce aims to provide an all-day experience.

“I’ve always approached our projects with the narrative, ‘What’s our sauce?’ By that, I mean how do we convey our persona, style, and forthright character in everything we choose to create?” said Jeremy Sasson, Heirloom Hospitality CEO and founder, in a statement.

In this case, the ‘sauce’ is providing “a little bit of everything for the neighborhood — an artisanal café before and after lunch, an after-work drink spot, thoughtfully curated, chef-driven restaurant for a memorable night out, and so much more. It’ll be a modern, multi-faceted take on Italian food that goes beyond the standard notion of a red-sauce joint.”

Warm Italian traditions combined with a relaxed California style is how Heirloom Hospitality describes the new venue that will be open all day, serving breakfast, lunch and dinner.

The restaurant is led by Executive Chef Myles McVay, previously of Otus Supply and Toast, and is slated to be a “modern, new-age” Italian restaurant with a wood-burning hearth. Food options will include Neapolitan pizza and made-from-scratch pasta along with in-season Midwestern produce, heritage grains and local, farm-raised meats.

The all-day coffee bar, called Sauce on Side or SOS, will have seasonal lattes, affogatos, house-made gelato and freshly baked goods. Pastry Chef Sharyn Harding will head up the pastry menu. Guests will also be able to purchase drinks and pastries at a walk-up, street-side window.

For alcohol, there is a wine bar and bottle shop specializing in California and Italian wines, small-production bottles and beer from Italy and Michigan.

Designed by Detroit-based architecture firm McIntosh Poris, the open-concept space has high ceilings but separated areas for each concept designated by color palette and seating arrangement.

Yet unnamed features of the venue include an evolving rotisserie and several bar experiences. There will be outdoor patio space as well.

Heirloom Hospitality owns and operates Townhouse Birmingham, Townhouse Detroit, Prime + Proper and the nightclub Cash Only.
