Jarrett Milton and Courtney Lindsey barbecued together in college, long before they decided to serve 100 percent vegan barbecue at their new Houston Sauce Pit food truck.
The truck opened in January by the two co-owners and has a regular location and regular customers in the Third Ward at 4402 Emancipation Blvd. It roams Houston during the rest of the week for pop-up meatless barbecue destinations.

Using plant-based Beyond Meat products and adding in a special mix to prep the menu items to make them taste unique, Milton said vegans and traditional barbecue lovers alike won’t find anything quite like it. As he dripped vegan butter mixed with a “season-all” onto hamburger buns ready to be toasted on the pit, Milton explained what keeps bringing customers back for vegan brisket, burgers, loaded baked potatoes, mac and cheese, smoked links, wings and more.
“So anybody can buy a Beyond Meat patty for a burger, right? And they come in these little bricks. But we don’t take those bricks and just put them on the grill,” Milton said. “We take those bricks. We do a special little hook ’em up, season ’em up. Then, we throw them on the grill.”

The season-all goes into just about everything at the Sauce Pit, Milton said.
Together, Lindsey and his wife own Houston Sauce Co. that crafts hot sauce and salsa verde that Houston Sauce Pit serves for customers to spice up their ‘cue. There is also the Sauce Co. Shoppette at 4300 Wayside Drive. It serves as the prep kitchen and has three flavors of house-made bottled lemonade, the sauces and other vegan items for sale.
“So all of this stuff is like specially made just for us,” Milton added. “You won’t find it anywhere else. Or you won’t find any Hunt’s barbecue sauce, you know what I mean?”
After Lindsey went all vegan, he and Milton were on a Texas road trip. They noticed how many barbecue locations were available in Texas and asked, why not vegan barbecue? Milton said he eats about 70 percent vegan and that a lot of the customers at the Sauce Pit are not vegan either.

“I think that’s what helps keep our balances is I’m not even vegan. I don’t want the food to be just for vegans,” Milton said. “If everyone in Houston can eat my food, that’s what I’m looking for versus just vegans eating my food.”
Asked whether the vegan barbecue menu items are healthier than regular barbecue, Milton kind of chuckled and said they are really just “different.”
“The not-so-secret is we are still vegan comfort food,” he said.
On Saturday, Feb. 22, the truck maintained for a while a lunchtime line of about four or five customers waiting on Emancipation. Wesley Wood and his girlfriend Kiara Zapata were standing, anticipating their order. It was actually their second visit to Houston Sauce Pit in about 12 hours because the truck had been sold out of the vegan wings and mac and cheese the night before and that’s what Zapata had her heart set on.
“It’s pretty awesome. You can’t even tell it’s vegan,” said Wood.
Although, Milton and Lindsey are busy with their ventures already, they are looking to expand yet again. The Burger Plant will be a vegan burger truck. It should open in early summer, according to a publicist. Milton added they plan to get a brick and mortar stores with both Houston Sauce Pit and The Burger Plant but want to focus on what they already have for now.
“But right now, we’ve got so many loyal fans for the pop-ups, we’re going to keep going with that.”
