Southern Living says this Alabama barbecue sauce is one of South’s iconic recipes - AL.com

It’s no secret that white barbecue sauce is a tasty specialty in Alabama, beloved by folks who visit restaurants such as Big Bob Gibson Bar-B-Q, Miss Myra’s Pit Bar-B-Q and more. Now Southern Living has proclaimed Alabama white sauce as one of the South’s most iconic recipes.

We’re happy to agree with that — and primed to slather some tangy white sauce on barbecue chicken as soon as possible.

“While folks all over the South lay claim to dishes as their regional favorites, a tasty handful have been lauded as signature state recipes — and we’ve tasted a LOT of them!” Southern Living said in recent list touting more than 30 iconic recipes. “It’s almost impossible to pick favorites, but these tasty dishes won over the hearts and tastebuds of our editors and Test Kitchen.” (See the full list from Southern Living here.)

Alabama white barbecue sauce wasn’t alone on Southern Living’s roster of iconic recipes from the South. The magazine also lauded Alabama crab salad (a Gulf Coast specialty, also known as West Indies salad), and a spicy appetizer made with saltines, called Alabama Fire Crackers.

The three dishes from Alabama topped Southern Living’s list, which was presented in alphabetical order by state. And, although we’re all about white barbecue sauce, some tempting dishes from other states caught our eye, such as Nashville hot chicken, Louisiana jambalaya, Maryland crab cakes and Kentucky bourbon pie.

Some of the recipes touted by Southern Living take time and effort to make, but white barbecue sauce tends to be quick and easy, using simple ingredients such as mayonnaise, vinegar and pepper. The magazine provided its favorite recipe for white barbecue sauce, and even suggested branching out from smoked or grilled chicken, using white sauce on fried turkey cutlets.

Alabama white sauce dates back to the 1920s, as far as we can tell, and is credited to Decatur restaurant patriarch “Big” Bob Gibson, a former railway worker who became a barbecue king. White barbecue sauce is now a classic throughout the state, and has inspired some creative contemporary dishes, such as the White Lightning Nachos at Rhythm on Monroe in Huntsville.
