Coronavirus comfort cooking: Steak with vermouth shallot sauce - Boston Herald

We may be stuck at home because of the coronavirus pandemic, but we’re still taking our plate to Paris, France, with this steak dish inspired by some of our previous travels.

Loosely based on a tasty bavette we once ate in a sports bar beside the Seine, we’ve taken a classic short loin cut and covered it in a sweet yet savory shallot sauce. Unlike ze original, ours can be savored sans secondhand smoke, and it features a hit of booze that adds a certain je ne sais quoi to its flavor.

It’s best enjoyed alongside a starchy side of your choice as well as a bottle of big, bold red — or pitcher of Manhattans, for those folks who just can’t get enough vermouth. Bon appétit!

1 lb. New York strip steak
5 shallots, thinly sliced
2 T. olive oil
¼ c. sweet vermouth
1 T. butter
Salt and pepper to taste

Preheat the oven to 350 degrees.

Pour olive oil into a large sauté pan and put on the stove over low to medium heat. Mix in shallots, salt and pepper. Allow the shallots to cook until they turn translucent and begin to brown, stirring them occasionally so that they don’t stick to the pan and burn.

Once the shallots look slightly caramel in color (about 10 minutes), deglaze the pan with vermouth. Turn the heat down low and allow the alcohol to cook off (about 3 minutes or until the smell no longer stings your nose). Remove from heat and set aside.

Take your steak and thoroughly pat it dry. Generously season all sides of the meat with salt and pepper.

Put a cast iron or oven-safe skillet onto the stove over medium to high heat. Sear steak on both sides (about 5 minutes each).

Take the skillet and place it in the oven to finish cooking. Remove it from the oven once it reaches an internal temperature of 140 degrees (about 8 minutes).

Rub the top of the steak with butter so it melts into the meat. Let it to rest for 10 minutes so that the internal temperature continues to rise to 145 degrees and so that its juices remain intact. Cut on a bias, top with vermouth shallot sauce and serve.
