Whirl it up in your food processor and use it on almost everything
My favorite recipes are the ones that really pull their weight in the kitchen. A slow-cooker pork that can be used in several different ways? Sign me up. A versatile vinaigrette that can perk up sweet and savory salads? Yes, please. A pound cake with seemingly endless topping options? Now you’re talking. And when summertime rolls around, I bust out my go-to Summer Sauce recipe.
This all-purpose condiment is a life-saver during the hotter months of the year, when things like tomatoes and peaches are at their best, but you might not know what to do with them. It’s also a genius way to use up bunches of fresh herbs, which start taking over garden beds and going “two-for-one” at farmers markets and grocery stores.
What Is Summer Sauce
Made in a food processor, it comes together in minutes and you probably have most of the ingredients on hand: basil, parsley, mint, garlic, olive oil, salt, and lemon. Bright, zingy, fragrant, and wonderfully green, Summer Sauce is something you’ll want to have in your refrigerator all season long. It’s flexible too—as long as you use the same amount of fresh herbs you can play around with the ratio of basil, parsley, and mint, or just use two of the three.
Ways To Use It
Similar to a pesto sauce, but without nuts or cheese, Summer Sauce can be used in so many ways. Drizzle it over a Caprese salad or toss with mixed greens; combine with mayonnaise for a superior sandwich spread; use it instead of marinara sauce or pesto on a pizza or flatbread; toss it with hot pasta or stir into chilled noodles for pasta salad; drizzle a little over your favorite crostini. It also makes a fantastic marinade for grilled shrimp, pork, or chicken, or a dipping sauce for any protein.
If you omit the garlic, you can use it to dress peaches, strawberries, and other summer fruit. I even like a little bit drizzled over fresh pineapple.
How To Store It
Summer Sauce is best used within two days and should be stored in the refrigerator in an airtight jar or container. Give it a good stir before you use it to make sure all of the ingredients are combined.
