Celine Dijon chicken salad at Sisters has a hot sauce kick - STLtoday.com

Q • I would love the recipe for the yummy Celine Dijon chicken salad at Sisters Sandwich Shoppe. — Carolyn Lewis, Princeton Heights

A • Owners Jules Karagiannis and Tracy Calabro are sisters in real life and business partners. They first opened Espresso Yourself coffeehouse in 2018.

When the storefront adjoining the coffeehouse became available, Karagiannis and Calabro decided the time was right to pursue the neighborhood sandwich shop they’d talked about for years. They opened up the wall between the two spaces and began a new chapter with Sisters.

RECIPE: Celine Dijon Chicken Salad

Yield: 4 sandwiches

Creativity is a strong point for these sisters in the food, and in the décor. They have a knack for knowing what their south side neighborhood needed — a gathering place for neighbors and friends with tasty, interesting food, good coffee and good music on occasion.

“We wanted to put a little twist on all our classic sandwiches at Sisters. My youngest daughter, Eleni, puts hot sauce on everything. It was her idea to add hot sauce to the chicken salad. So we did a little research, and decided hot sauce and Dijon would be a good place to start, and it went from there,” Karagiannis says.

“Oddly enough, both my daughters had recently gone to a Celine Dion concert. Eleni loves puns, so she threw out Celine Dijon as the name for the chicken salad. We both thought it was perfect.”

The sandwich quickly became a customer favorite, one of the top three sellers at the cafe that opened in 2021. The roast beef Au Jus You Shouldn’t Have and the Gagagool, an Italian sub piled high with roast beef, salami, capicola and provolone are also top picks from the lineup of delicious sammies at Sisters.

The sisters source locally for both cafes, supporting local businesses and organizations. The bread and bagels for their sandwiches come from Bridge Bread, a nonprofit social enterprise employing persons experiencing homelessness to provide them with marketable skills. The hoagie buns for Celine Dijon come from Bridge Bread and can be purchased at its Cherokee Street store.

Karagiannis and Calabro not only provide good food and coffee, but they’ve also built a community at their south side cafe and coffee house. They feature local artists in an ongoing series of shows. They bring in musicians on weekends, posting players and details on their Facebook pages.

Look for new items coming to the menu. “We’re working to come up with our take on the classic Reuben sandwich,” Karagiannis says, “and during Lent, we’ll have a tuna salad on the menu.” Of course, each classic will have a flavorful twist.
