As we approach mid-August we can finally say tomato season has arrived! Although there are tons of recipes for fresh tomatoes, my favorite thing to make is Heirloom Tomato Sauce. Heirloom tomato lovers wait all year for their garden vines to be weighed down with plump red, yellow and orange tomatoes so they can make sauce. Most people will harvest bushels of tomatoes and jar the sauce to be used way into the winter months.

What Are Heirloom Tomatoes?

Heirloom tomatoes are produced from seeds which have been passed down from season to season. Farmers and home growers will take seeds from the tomato plants that produced the best fruit and use them to produce next seasons crop. Heirloom tomatoes are also pollinated naturally, by birds, bees, wind, or human hands. No genetic modification needed.

On occasion I will chop up the ripest tomatoes and toss them with pasta, and some fresh basil and call it a day. But sometimes I want to make a thick heirloom tomato sauce and that takes  a few extra ingredients such as garlic and a bit more time.

How to Make Tomato Sauce From Heirloom Tomatoes

The first step is blanching the tomatoes to rid them of their skins, lending to a more luxurious sauce. Once the skins are removed, the rest is simply a matter of cooking down the sauce until it reaches the desired consistency. Keep reading for full recipe.

How to Thicken Heirloom Tomato Sauce Naturally

The easiest way to thicken tomato sauce is to let it cook. Push your pot to the back burner and let it simmer for hours. If you want it done faster, you can always try one of these methods:

  • Add oil: Adding a little Tuscan olive oil and mixing it with an immersion blender will not only thicken your sauce, but also make it silky smooth and rich.
  • Add finely diced vegetables: Adding in chopped celery, carrots and onions will thicken the sauce and add a nice flavor.
  • Use paste: Adding tomato paste may be the easiest and fastest way to thicken your sauce without changing the taste.

A fresh heirloom tomato pasta sauce deserves an equally fresh wine. I like the Lagaria Pinot Grigio from the Venezie area of Italy for its pleasant floral and fruity aromas of apple, apricot and pear. Or perhaps a Sicilian red, such as the Cantine Ermes Nero D’Avola.

Heirloom Tomato Sauce

Ingredients

  • 3 lb ripe red or yellow heirloom tomatoes blanched
  • ½ cup extra virgin olive oil
  • 6 large garlic cloves, finely sliced
  • 1 small bunch basil, chopped
  • salt and pepper to taste
  • 1 tsp aged balsamic vinegar (preferably 20 to 25 years old)

Directions

  1. Place the blanched tomatoes in a food processor and process until coarsely chopped.

  2. Heat a large heavy-bottomed pot on medium-high heat. Add the olive oil and garlic and sauté for 1 minute. Add the tomatoes and bring to a boil.

  3. As soon as the sauce reaches boiling point, reduce heat to low and simmer uncovered for 1 hour or until the sauce has thickened.

  4. Add the basil, salt, pepper and balsamic. Continue to simmer for 2 to 3 minutes until basil has wilted.

  5. Remove from heat and use with your favorite cooked pasta
