Avocado “hollandaise” sauce is the brainchild of Felicia Wu, the food blogger behind Felicia’s Fab Foodz. “It’s the perfect fancy-looking Sunday brunch, and it’s so easy to whip up,” she wrote on Instagram. To make it, put half an avocado in a blender with a little lemon juice, olive oil, your choice of milk, and salt, and blend until smooth.
Wu uses her healthy avocado hollandaise sauce recipe with a poached egg atop a slice of sprouted wheat bread, sprinkled with chopped chives and ground black pepper. Avocado “hollandaise” sauce
Ingredients
1/2 avocado
Juice of 1/4 lemon
2 tablespoon olive oil
1 tablespoon milk of choice
Salt (to taste)

1. Blend all ingredients until smooth and there are no chunky bits of avocado.
2. Add more milk if needed.
