BBQ sauce can be spicy, tangy or sweet. Some sauces are better for fish, while others pair well with chicken or red meat. Depending on your preference, you can add nearly anything you want to BBQ sauce to make it your own. But first, here’s what you’ll need for the foundation.

A simple BBQ sauce recipe

To make a sweet, thick BBQ sauce you’ll need a few things.

Combine 2 cups ketchup and 2 cups brown sugar in a mixing bowl. Add 2/3 cup apple cider vinegar. Now, measure out 1 heaping tablespoon of Worcestershire sauce and put it in the bowl. Mix well. If the sauce is too thick, add 1/3 cup of water. Once that’s done, stir in any seasonings you desire. Popular options include:

  • Salt and pepper
  • Onion powder
  • Garlic powder
  • Horseradish
  • Ground mustard
  • Paprika and other herbs

Start with 1/2 teaspoon increments for each seasoning. Increase the amount as needed for a stronger flavor combination.

If you’re short on time or prefer to use the sauce as is, simply baste the meat with the sauce and cook or grill it as you normally would. Otherwise, pour the sauce into a saucepan and cook it on low heat for 30 minutes. Stir occasionally to keep it from burning or sticking to the sides.

Feel free to include more seasoning, vinegar, ketchup or other ingredients during this time. For a spicier result, add a teaspoon of your favorite hot sauce. Keep the sauce on the burner until the new additions are fully blended.

BBQ sauce with mayonnaise

Mayonnaise can be used instead of ketchup to make BBQ sauce. Combine 2 cups mayonnaise, 4 tablespoons brown sugar and 1/2 cup apple cider vinegar in a bowl. Then, add about a teaspoon each of salt and pepper. For more spice, use a dash or two of horseradish or cayenne pepper, as well. Mix the ingredients until the sauce is smooth without any lumps.

BBQ sauce without brown sugar

For this recipe, chop up two large sweet onions and put them in a pan. Add three or four cloves of garlic (peeled and diced) and 3 tablespoons of olive oil. Turn the burner on medium and sauté the onions until just before they start to turn brown.

Next, peel and slice five or six pieces of fruit. Apples and peaches are popular options, but you can use other fruits like pears or plums instead. Make sure to remove any seeds. Put the sliced fruit into a food processor and puree until smooth. Pour the pureed fruit into the pan.

Then, add 1/4 cup of Worcestershire sauce and 1/2 cup of apple cider vinegar to the pan, along with a dash of chili powder, salt, pepper, paprika or anything else for taste. Lower the heat and let the mixture simmer for half an hour or so. Let the sauce thicken.

Canning BBQ sauce

Homemade BBQ sauce will last up to a week if stored in a sealed container in the refrigerator. But if you're making a large batch of it or need it to last longer, try canning it instead.

To can BBQ sauce, start by thoroughly washing the canning jars. Let them air dry.

Next, pour the sauce into each jar. Do not completely fill the jars. Instead, leave 1/2 inch or 1 inch of space at the top. Press down on the sauce with a silicone spatula to remove any air bubbles.

Now, place the lid on each jar. Tighten each band as much as possible. Put the jars into a pot of water and boil for 20 to 30 minutes.

Use canning jar lifter tongs to remove the jars from the water. Leave them to cool completely. Once they're safe to touch, press on the lid of each jar to confirm they've been properly sealed. The lids should not pop or move at all.

Store the canned BBQ sauce in a cool, dry place for 12 to 18 months. Discard any remaining sauce that wasn’t sealed properly.

Final BBQ sauce tips

Here are some tips on making and using your homemade BBQ sauce.

  • If the sauce is too thin, slowly introduce cornstarch to it. Start with 1/2 teaspoon and go up from there until it reaches the right consistency.
  • Sauce that's been heated on the stove will thicken as it cools, so wait for 10 to 15 minutes before trying to thicken it.
  • Make the BBQ sauce more tart or tangy with a dash of soy sauce, fresh citrus juice or cayenne pepper.
  • Use sugar-free ketchup or strained and pureed tomatoes for a healthier sauce.
  • If the sauce isn't sticking to the meat, add a tablespoon or two of honey. This will also make it sweeter and neutralize the vinegar flavor.
  • BBQ sauce can be used as a marinade or dipping sauce, depending on preference.
  • Don't be afraid to increase the spice and seasoning ratio for a more flavorful taste.
