As part of the seemingly never-ending battle for chicken sandwich supremacy in the fast-food game, a topping created by Irvine-based restaurant-supply giant Golden State Foods has won its industry’s “Sauce of the Year” prize.
The Association for Dressings & Sauces honored Zaxby’s Caribbean Jerk Sauce created by Golden State for the Atlanta-based restaurant company known for its chicken. Zaxby’s, with 900-plus outlets primarily in the southeastern U.S., used the sauce — a blend of mango, habanero peppers, and spices — on a fried chicken sandwich and boneless chicken wings.
“Authentic, fruity, sweet and spicy,” said Kate Dolan, Golden State’s senior corporate chef, of the sauce used on a sandwich that included banana peppers, lettuce and mayo.
The sauce was supposed to be a limited-time special taste, and the quick-serve chain literally ran out of it. When supplies were replenished, the sauce enjoyed an extended stay on the menu.
“As consumers enjoy pepper and spice-flavored foods, the ‘spice and heat’ trend influenced this crowd-pleasing sauce, which features just the right amount of heat and a balanced flavor profile,” said Mitch Dingwall, Golden State’s senior director for production development.
The “chicken wars” are a high-profile, fast-food battle that was started a year ago by the Popeye’s chain. It spawned a broad fight for business in a sandwich niche long dominated by Chick-fil-A. The marketing efforts have included new products as well as corporate messaging with battlefield themes.
For example, Zaxby’s last month announced in a “Bulletins from the War Room” press release that another sandwich flavor was rolling out as well as new camouflage uniforms for its restaurant crew members.
Meanwhile, Golden State’s division that produces sauces, dressings, condiments, syrups and dessert toppings has a new executive.
Ryan Hammer has been promoted to corporate senior vice president to oversee the company’s Liquid Products North America sales team as well as continuing to run Quality Custom Distribution — supplier to major fast-food chains that relocated from Irvine to Texas last year.
