The smells of spring go far beyond that of flowers in bloom and tilled soil.
It is also the burning of leaves and limbs left from the winter, and folks cranking up grills for some backyard cooking.
Wayne County has always been noted for its barbecue and for years it had the bragging rights.
We had our share of top-of-the-line barbecue restaurants, but the times have changed.
Today, and even back then, I have always maintained that the best barbecue and barbecue chicken in this entire county is not in the restaurant, it is in someone’s backyard.
It comes from the weekend cookers who have been handed down recipes for generations, including the sauce that goes with it.
Making a good vinegar-based barbecue sauce like we cook around these parts takes know-how, not sitting around blowing off steam and bragging.
Good barbecue comes from knowing what you are doing and years of doing it. How many times have you been to a pig pickin’ and when all is said and done, everyone agrees it was the best they had ever eaten?
Gas, charcoal or oak wood, it all gets the job done if the cooker really knows what he is doing.
Wayne County’s barbecue joints over the years included Scott’s, Holloways, Parkers, Griffin’s and Wilber’s.
They were all good and brought attention to the county, but the best was always out of someone’s backyard.
The smell of burning leaves and yard debris, along with that of grills cranking up in the neighborhood are sure signs of the season.
Do not forget that the best of barbecue sauces is the best because it has been kept a secret for years and years.
Some of the sauces I have enjoyed over the years come from family secrets that are near sacred.
Any seasoned cooker can turn out a good pig, but it is the sauce that completes it all.
Some recipes I have seen go back as far as post-Civil War days.
Those were the days when it was really pit cooked.
Pay attention to the smell of a pig cooking in someone’s backyard.
You never know — the best of the best just might live right there in your neighborhood.
That is why they are among the best — because they don’t tell anyone about it and had just prefer the meal and not tell everyone how good they are.
