When I was a kid in the 1980s, I spent hours at the local store scouring the large cassette tape display case for the newest releases from my favorite music bands and artists. It was the best way to spend a $10 allowance.
Nowadays, I spill spend hours examining what’s new, but I do it in the sauce and spices aisles at grocery stores and meat markets, looking for the next great product in barbecue. And it turns out, there are many that are new (to me at least) since I did my first commercial sauce review in 2018.
So let’s get saucy — again.
Better Than Good Red Chile Garlic Bacon Jam: The splendid smell of bacon and garlic always takes me to a good place, so there was serious nasal nirvana after popping the lid. This thick jam is an ideal topper for burgers or baked potatoes. Layer it on top of a buttery slice of grilled Texas toast, or this can stand alone as a dipper. ($7.20 for 8 ½ ounces, available only at H-E-B)
Craig’s BBQ Sauce: The signature sauce from the lineup of Houston-based Texas Pepper Jelly products is a mainstay on the competition barbecue circuit, so this was treasure hunting at its best. It leans on the sugary side with noticeable hints of apple juice and molasses, but the habanero powder infusion gives it a finishing kick of heat that pairs well with beef and all other meats. ($3.99 for 21 ounces, available at H-E-B)

Gourmet Warehouse Kickin’ Strawberry: Mango and pineapple are the dominant fruits used in barbecue sauces, but this strawberry blend brings a new groove to the barbecue party. Those are real, noticeable strawberry seeds in the blend, and those are real, noticeable jalapeño seeds, too.
More heat than sweet, it screams to be used as a sauce for chicken wings. ($4.10 for 16 ounces, available at H-E-B)
Memphis Mistress Pit Sauce: One of the best new sauces is made here in San Antonio. Bryan Crawford is a competition pitmaster and owner of the recently opened Lone Star BBQ Pro-Shop. He has his own line of sauces and rubs called Crawford’s Barbecue.
“I asked the bottler what he thought of it, and he said it tastes like a Memphis style with some Texas in it, so that’s how I got the name,” Crawford said.
Memphis Mistress is extremely thin, with the consistency of a stock broth. It has a candy tang element to it that is complimented with lots of black pepper, and it works best as a sauce continually applied like layers of paint throughout the cooking process.
Crawford sells the sauce ($11 for 16 ounces), as well as a large assortment of his rubs and spritzes at area meat markets throughout the city and in his Helotes store at 9708 Business Parkway, Suite 122.

True Made Foods Kansas City BBQ: This sauce starts out with skepticism because Texas barbecue people and Kansas City people are mortal enemies. But this sauce is light on sugar (only 5 grams per serving), relying instead on a bevy of pureed vegetables that carries the flavor.
It’s worthy of cabinet space, even if you are tempted to hide the label. ($5.14 for 17 ½ ounces, available at H-E-B)
SuckleBusters Gold: Heavy on the vinegar, the Gold brings plenty of pickle pucker combined with mustard seed, but it gets toned down to a sweetened finish. Not as thick as others, it’s versatile and could be used for everything from mopping the meat to a finishing glaze.
As suggested on the bottle, it’s good poured over sliced sausage or pork steaks, and also works well with seafood and chicken. ($6.99 for 12 ounces, available at Lone Star BBQ Pro-Shop and other select locations)
