No food says football quite like Buffalo wings. Those sizzling, spicy chicken flappers are always the first thing to vanish from any game-day spread, and with good reason: we can’t get enough of that addictive Buffalo sauce burn.

According to lore, that distinctive flavor was born at the Anchor Bar in Buffalo, N.Y., in 1964 when owner Teressa Bellissimo doused a batch of fried wings in a combination of melted butter and Frank’s RedHot cayenne pepper sauce.

The formula for basic Buffalo sauce hasn’t changed since then. All you need is butter and a tangy Louisiana-style hot sauce. But if you’ve ever made it at home, you know the pungent sinus-clearing aroma wafting from the pan will linger for hours after the last wing has been gobbled up.

There are numerous bottled Buffalo-style wing sauces on the market today. Simply fry or bake your wings, toss them in a splash of sauce straight out of the bottle and start noshing.

This week I sampled 11 varieties of prepared wing sauces available in San Antonio-area grocery stores to determine which are worthy in the kitchen. Several delivered a good balance of flavors, while others came up short of the goal line. This guide will help you find the right bottle of traditional Buffalo taste for your next game day party.

Offensive penalties

These sauces are all a hard pass, either from an imbalance of flavors, unpleasant chemical tastes or other flaws.

Buffalo Wild Wings Medium Sauce

Those loyal to this chain of wing restaurants won’t find nearly as much to love in the brand’s bottled sauce. It’s intensely salty with little else going on.

Great Value Medium Wing Sauce

Walmart’s house label wing sauce suffers from the addition of ingredients such as Worcestershire sauce. It also has a weird, starchy texture and a lingering chemical aftertaste.

Melinda’s Creamy Style Ghost Pepper Wing Sauce

This sauce is all about heat from both habanero and ghost chiles, and not much more. The lopsided balance of spice doesn’t give the tangy vinegar and salt any room to move downfield.

Sweet Baby Ray’s Buffalo Wing Sauce

The most milquetoast of all the sauces sampled, this offering is far too tame in the heat and tang department, relying instead on salt to do all the work. The unpleasant aftertaste doesn’t help any.

Whole Foods Organic Buffalo Wing Sauce

A sauce made with clean ingredients only scores if they’re the right ingredients, and that’s not the case here. Whole Foods makes their with red jalapeños, sending this sauce right out of bounds.

Frank’s RedHot Buffalo Wings Sauce

The very first batch of Buffalo wings was made with Frank’s RedHot, and that iconic flavor is in this bottle. This sauce has a punchy balance of spice and tang without going overboard on the salt. There’s a nice garlic kick in the background as well, making this sauce a score.

H-E-B Flyin’ Saucy Buffalo Wing Sauce

As with most of its house-labeled products, H-E-B puts points on the board with this very solid sauce. It has a well-balanced flavor with a hint of butter and an excellent silky, texture that will make any batch of wings a winner.

Louisiana The Original Wing Sauce

What stands out here is the very clean and distinct flavor of cayenne pepper perfectly balanced with vinegar and salt. This sauce is one of few I sampled that includes a bit of sugar. While it’s not enough to make the sauce taste sweet, it does help enhance the flavor of the chiles.

Noble Made Medium Buffalo Dipping & Wing Sauce

This luxe, preservative-free sauce was the costliest one sampled at $7 per bottle, but it delivers on that price tag with bold flavor an absence of any off-putting chemical notes. For those with special dietary needs, this sauce is Certified Paleo and Whole30 Approved.

Primal Kitchen Buffalo Sauce Made With Cashew Butter

This option goes long with a generous dose of cashew butter and avocado oil, giving it the creamiest texture of all the sauces sampled. Beyond that, it has an excellent balance of flavors that taste surprisingly traditional despite the inclusion of cashew butter.
